Easy Mode being patched into Dragon’s Dogma in Japan
A patch for Dragon’s Dogma will be released in Japan on August 6, which will make the game a bit easier for beginners. Easy mode will be added to the game’s options menu, which will allow players to switch between difficulties at will. Players can also partake in a new demo on August 9 which contains the opening through the end of the hydra battle. Save data from the demo will carry over into the game. Dragon’s Dogma 2 is being hinted at by series creator Hideaki Itsuno. Thanks, Andriasang.

is Dragon honey, please proceed with the proper patch
As for the topic at hand, that is a dogma on itself, making a hard game easier.

The game is really just mean to you in the beginning.
Chimera? No problem. Ogre? Easy peasy. Hydra? Pussy.
Then you meet your first common group of bandits and have your entire party brutally stabbed to death in seconds.
Thanks D2

“Easy mode” ? Seriously ?
The game is quite easy already. Just platinum’d it yesterday.
I really enjoyed the game a lot, but it is hard ONLY at the very beginning, when you’re not fully familiar with the games mechanics or if you try to wander off the roads, at night (and end up encountering a Cyclop/Ogre/Chimera/Griffin). If, at low levels, you keep using the roads, you don’t encounter any kind of (serious) problems.
On top of that, after just a few hours, the game REALLY become easy. And as the enemies stay at the same level, the more you level up, the easier it gets.
To get my Platinum trophy I had to complete the game 3 times (could have done it in 2 but completing all the quests was tricky as some of them are hidden) and even on the second playthrough I had absolutely no challenge at all. Even had to use totally different classes to get the game interesting.
That is one of the problem of the game: it quickly become too easy (after lvl 30+) and THEN the only real challenge (the Ur Dragon, “online” boss) requires you to be around lvl 80-100 to really make a difference (otherwise your attacks on him are like a mosquito’s bite).
There’s a gap that is too big. Hope they’ll change that for DD 2
